A Peach Morning!

I absolutely suck with desserts; it goes back to my childhood, my mother used to make a caramel pudding on Saturday and after a week or two the pudding would still be there. Almost talking  to you when you opened the fridge. Nobody had even touched it. Nobody in my house cared for sweets. Not that the pudding was disgusting or anything, it  was actually very good, it was just that none of us had a sweet tooth.

So until 8 years ago  I never used to pay too much attention to sweets, so what happened 8 years ago that made me change? Well I met my other half, and let me tell you ….my other half would eat a brick if you sprinkle it with sugar. I never met anyone like that, so into sweets, it’s his weakness, his kryptonite. But similar to everyone  in Manhattan we are always in some sort of a diet, I’m always looking for some solution to make something sweet but healthy and he calls it “Suzy Surprise”. I don’t have any idea where this name came from…. I’m just hopping that there is not some “Suzy” around feeding MY Hubby with sugary treats somewhere…that would be despicable .

Anywho !!! So I decided to surprise my hubby with a sweet sugary breakfast of caramelized peaches and hot cereal.  It tasted delicious and it was guilt free.

Caramelized Peaches

  • 3 cups of milk           
  • 1 tablespoon of honey
  • ½ teaspoon of cinnamon
  • 2 cups of Quaker oats
  • ½ cup of pecan crushed
  • 1/3 of a cup of shaved almonds for topping
  •  For the Peaches:
  • 3 teaspoon of unsalted butter
  • 2 tablespoon of orange juice
  • ½ teaspoon of vanilla extract
  • 2 tablespoon of brown sugar (God help us)
  • Orange zest

    Preheat the oven to 400F. Coat the bottom of the ovenproof dish with 3  teaspoon of butter. Combine the peaches, orange juice, orange zest, vanilla extract and 2 tablespoon of brown sugar, toss to coat the peaches evenly. Then spread the peaches out evenly. And roast for 30 to 45 minutes.

    Nice solution to your “dilemma”. I lack a desire for sweets as well. If given the choice between a piece of chocolate cake and a piece of warm crusty bread…..I’d take the bread every time!
