Zucchinis Bruschettas

When I moved to NY I didn’t use to go to Farmer’s Market, or give too much thought to groceries. But after I started my blog I realized how wonderful Farmer Markets are. Now I love to go there to shop for veggies and fruits. Everything looks so fresh and beautiful. So all the time I’m there I’m taking pictures of their goods. For “us” Bloggers it makes totally sense, right? But some people wonder why on earth you are taking pictures of radicchios. So yesterday I bought some zucchinis and came home thinking what to do with them. There is so much you can do like zucchini bread, salad frittatas…. But I felt like something more festive, to have with some drinks. So I decided to make a bruscheta with raw zucchinis and ricotta cheese. And because I like spicy food I put some red chilies on it. And mmmmm it was really yummy.

Zucchinis Bruschetta

For the cheese mixture:

  • 1 cup of ricotta cheese
  • 1/3 of cup of goat cheese
  • 1/3 of cup of Parmesan cheese
  • 2 zucchinis thinly sliced (I used the mandolin)
  • 2 small chilies, thinly sliced
  • 1 clove of garlic
  • 1 tablespoon of lemon zest
  • 2 tablespoon lemon juice
  • Olive oil
  • Sea salt and cracked black pepper

Mix the 3 cheeses and set aside . Marinate the zucchinis with the chili, garlic, olive oil, lemon zest, lemon juice, salt and pepper. Top the toasted bread with the cheese mixture and the zucchinis and serve.

I love the combination of those three cheeses. Farmer’s markets are awesome for goodies like this.

What a lovely open faced sanwich indeed! I eat nearly the same one but only with sheep’s milk ricotta & the zucchini’s!!

What a great use of all that summer zucchini! And all those cheeses sound wonderful! I’ve only been enjoying the Farmer’s Market for about 4 years now. I had no idea what I was missing. I tend to get a few strange looks with my camera, but food is darn beautiful!
