Almond And Apple Cake

Boy, oh boy, it’s raining cats and dogs outside. And what could be better to cheer oneself up than an upside down apple cake. I was looking at one of my magazines and found this recipe. It’s extremely easy and delicious, and the crushed almonds make it fabulous.

Almond And Apple Cake
- 5oz butter, softened
- 5oz caster sugar
- 6 Tbsp Maple syrup
- 3 large eggs
- 1Tbsp lemon juice
- 5 oz self-raising flour
- 1 ½ oz ground almonds
- 2oz flake almonds
- 3 apples
- 1- 7-inch spring form cake tin lined with baking parchment.
Pre- heat the oven to 350F, Wisk the butter and sugar together until light and fluffy, then gradually Wisk in the eggs. Add 2 tablespoons of the maple syrup and the lemon juice. Fold in the flour the grounded almond and the almond flake.
Peel and core the apples and cut each one in 8 wedges.
Line the bottom of the cake tin with apples and drizzle over 4 tablespoons of maple syrup.
Pour the cake mixture over the apples and bake for 50 minutes to 1 hour or until a skewer inserted into the center comes out clean. Enjoy.

This looks so good! It is raining here too and believe it or not I’ve had cake on my mind. Gloomy weather tends to put me in the mood to bake.

Wow, this cake is absolutely fantastic. I made an apple cake once but it wasn’t as moist looking as this cake. Thanks for the link. I’m still disturbed by what happened. But at least we can still do something.

Ground almond always make cakes so moist – this is lovely! I love how golden it looks… I would gladly have one or two slices right now.

What a beautiful cake! I love any dessert that uses both nuts and apples together, so this sounds like it would be absolute heaven on a plate… yum.

This sounds delicious! I’ve always wanted to use ground almonds to make a cake with, but always seem to forget when it comes time to choose a recipe. You’ve given me a nice reminder!!!

Your cake looks absolutely delicious…I love the crackling, rustic top…and that slice on the plate…mm, wish I could have it not on the screen by right here in front of me! this is a a lovely recipe!

Sounds and looks incredible! This may be a silly questions, but what is caster sugar?

Thanks Kerry, it’s not silly at all, I didn’t know before, Caster sugar is the name of a very fine sugar that you may see in some dessert recipes. It is finer than granulated sugar but not nearly as fine as powdered sugar.
