Mediterranean cherry tomato salad

  • 5 cups of cherry tomatoes
  • ¾ pounds of a good feta cheese
  • 1 small onion sliced in the mandolin
  • 2 gloves of garlic minced
  • ¼ cup of good extra virgin olive oil
  • 3 tablespoon of lemon juice
  • 1teaspoon of salt
  • ½ teaspoon black pepper
  • 2 tablespoon of minced fresh basil
  • 2 tablespoon of minced fresh mint
  • 2 tablespoon of minced fresh parsley
  • Put in a little bowl the olive oil, lemon, garlic, and the shaved onions. Let it marinate.
  • Cut the cherry tomatoes in half. Cut all the herbs very finely, and mix with the tomatoes.
  •  Dice the feta cheese ¼ -inch dice, crumbling it as little as possible.
  • Toss carefully everything with the vinaigrette, serve chilled or room temperature.
