I just made your dish (minus the cockles!) and it was SOOOOO good! I baked some beer bread with grated Wisconsin cheddar cheese and butter and granulated garlic, then used it for dipping in that awesome clam liquor... can I say YUM-O!?!

Lovely! I am always looking for good clam recipes. I substituted my own homemade Linguica sausage which is more garlicky and spicy than Italian & added a hint of tarragon.

The one thing that was a bit of a problem was finding the 1/2 pond of cockles. I found the pond easily enough, but draining out half of it was a bit of a chore. Still hard to find the cockles in all that muck. So i substituted a half pound of some clammy thing I found here in the US supermarkets. Hope you don't mind!
