The Power of Internet!

What a shocker! I woke up this morning to find perfectly fluffed pillows on my couch. Whaaaaat? So that’s what it takes to get things going. OMG! I’m choking with power; I’m doing a list right now of things I want done. On the other hand I have to give kudos to my hubby for doing it. I’m so in love right now. You see how easy I am, No need for flowers or chocolate box, just fluff my pillows and dust my shelves and Oh yeah! I’m yours. And for the people not interested in my couch slash pillows situation I have a nice pasta recipe with Mediterranean flavors to keep the bulge at bay.
Pasta with roasted vegetables
- Gluten free Jerusalem artichoke spaghetti
- 1 zucchini sliced
- 1 eggplant diced
- 3 garlic gloves
- Sun dried tomatoes
- Green onions
- ½ teaspoon oregano
- Red pepper flakes
- Kalamata olives
- Salt and pepper
Directions:
In an ovenproof tray put the zucchini, eggplant, garlic, olive oil, red pepper flakes, salt and pepper, oregano and roast until golden. Cook your pasta al dente and toss with all the veggies then put the olives, sun dried tomatoes and green onions. Enjoy.
